Kouign Amann – pure butter
The famous “butter cake”, flaky and caramelised. Warm it for a few minutes in the oven.
Kouign amann — “butter cake” in Breton — was born in Douarnenez in the 19th century: a dough laminated with salted butter and sugar that caramelises as it bakes. Ours is made in Rédéné with Breton flour and no palm oil. Give it ten to fifteen minutes in the oven to bring back the crisp layers and the melting caramel: that is when it is at its best. 400 g, serves 6 to 8.
